Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Water
  • 0.5 cup Vegetable Oil
  • 1 lb Beef Stew Meat
  • 1 medium Onion
  • 3 medium Tomatoes
  • 2 medium Carrots
  • 2 medium Potatoes
  • 2 cups Beef Broth
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 0.5 tsp Turmeric
  • 1 tsp Salt
  • 0.5 tsp Pepper

Instructions

  1. 1In a large bowl, combine the 2 cups of All-Purpose Flour with the 1 cup of Water. Mix until a soft dough forms, then knead the dough for 5 to 7 minutes until smooth and elastic.
  2. 2Divide the dough into 8 equal portions. Roll each portion into a thin circle, about 6-8 inches in diameter. Brush each circle lightly with some of the 0.5 cup Vegetable Oil.
  3. 3Heat a flat griddle or large skillet over medium-high heat (around 400°F / 200°C). Cook each chapati for 1-2 minutes per side, until golden brown spots appear and the chapati puffs up slightly. Set aside and keep warm.
  4. 4Prepare the beef stew: Cut the 1 lb Beef Stew Meat into 1-inch cubes. Dice the 1 medium Onion, 3 medium Tomatoes, 2 medium Carrots, and 2 medium Potatoes into roughly 1/2-inch pieces. Mince the 2 cloves Garlic and grate the 1 inch Ginger.
  5. 5In a large, heavy-bottomed pot, heat 2 tablespoons of the 0.5 cup Vegetable Oil over medium heat (around 350°F / 175°C). Add the diced 1 medium Onion, minced 2 cloves Garlic, and grated 1 inch Ginger. Sauté for 3-5 minutes, until the onion is softened and fragrant.
  6. 6Add the 1 lb Beef Stew Meat cubes to the pot. Brown the beef on all sides for about 5-7 minutes. Stir in the 1 tsp Cumin, 1 tsp Coriander, and 0.5 tsp Turmeric, cooking for 1 minute until fragrant.
  7. 7Pour in the 2 cups of Beef Broth. Add the diced 3 medium Tomatoes, 2 medium Carrots, 2 medium Potatoes, 1 tsp Salt, and 0.5 tsp Pepper. Stir everything together.
  8. 8Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 1 hour, or until the beef is tender and the vegetables are cooked through. Stir occasionally.
