Kenyan Chapati Wraps with Avocado and Black Beans

Ingredients

  • 4 large Chapati
  • 1 can Black beans
  • 2 medium Avocado
  • 1 medium Tomato
  • 0.5 medium Red onion
  • 0.25 cup Cilantro
  • 1 tbsp Lime juice
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Pepper

Instructions

  1. 1Open the can of black beans. Pour the black beans into a fine-mesh sieve and rinse them under cold running water until the water runs clear. Let the 1 can of black beans drain completely.
  2. 2Place the 2 medium avocados in a medium bowl. Add the 1 tbsp of lime juice, 0.5 tsp of salt, and 0.25 tsp of pepper. Use a fork to mash the avocado, lime juice, salt, and pepper together until mostly smooth with a few small chunks remaining.
  3. 3Dice the 1 medium tomato into small, bite-sized pieces. Finely chop the 0.25 cup of cilantro. Dice the 0.5 medium red onion into small, bite-sized pieces.
  4. 4Lay out the 4 large chapatis flat. Spread an even layer of the mashed avocado mixture onto the surface of each chapati, leaving a small border around the edges.
  5. 5Evenly distribute the drained 1 can of black beans over the mashed avocado on each chapati. Sprinkle the diced tomato, diced red onion, and chopped cilantro over the black beans.
  6. 6Carefully roll up each chapati tightly, starting from one edge to enclose the filling. Serve the 4 Kenyan Chapati Wraps immediately.
