Kenyan Beef Stew (Kienyeji) with Gluten-Free Dumplings

Ingredients

  • 1.5 pounds Beef Stew Meat
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 cup Peas
  • 1 medium Onion
  • 3 cloves Garlic
  • 4 cups Beef Broth
  • 2 tablespoons Tomato Paste
  • 1/2 cup Tapioca Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Oil

Instructions

  1. 1Prepare your ingredients: Cut the 1.5 pounds Beef Stew Meat into 1-inch cubes. Peel and chop the 2 medium Potatoes into 1-inch pieces. Peel and chop the 2 medium Carrots into 1/2-inch thick rounds. Chop the 1 medium Onion. Mince the 3 cloves Garlic.
  2. 2Heat the 2 tablespoons of Oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat, about 350°F (175°C). Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the browned beef from the pot and set it aside on a plate.
  3. 3Reduce the heat to medium, about 300°F (150°C). Add the chopped onion to the same pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 more minute until fragrant.
  4. 4Stir in the 2 tablespoons of Tomato Paste and cook for 1 minute, stirring constantly.
  5. 5Return the browned beef to the pot. Pour in the 4 cups of Beef Broth. Add the chopped potatoes and carrots. Season with 1 teaspoon of Salt and 1/2 teaspoon of Pepper. Stir everything together.
  6. 6Bring the stew to a boil, then immediately reduce the heat to low, about 200°F (95°C). Cover the pot and let it simmer gently for 1 hour, or until the beef is tender when pierced with a fork. Stir in the 1 cup of Peas during the last 15 minutes of simmering.
  7. 7While the stew is simmering, make the dumplings. In a medium bowl, whisk together the 1/2 cup Tapioca Flour, 1 teaspoon Baking Powder, and 1 teaspoon Salt. Gradually add just enough water to form a soft, sticky dough. You may not need all the water.
  8. 8Once the stew has simmered for 1 hour and the peas have been added, drop spoonfuls of the dumpling dough directly onto the surface of the simmering stew. Cover the pot tightly and continue to cook for 15-20 minutes, or until the dumplings are puffed up and cooked through. A toothpick inserted into a dumpling should come out clean.
  9. 9Serve the Kenyan Beef Stew hot, topped with the gluten-free dumplings.
