Ingredients

  • 1 cup Dry Beans
  • 1 cup Corn Kernels
  • 2 medium Potato
  • 1 large Carrot
  • 1 medium Onion
  • 2 medium Tomato
  • 2 cloves Garlic
  • 4 cups Vegetable Broth
  • 2 tbsp Cooking Oil
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1.5 cups Gluten-Free Flour Blend
  • 0.75 cup Water
  • 2 tbsp Olive Oil

Instructions

  1. 1The night before, or at least 6 hours ahead, place the 1 cup dry beans in a bowl and cover with plenty of water. Let them soak.
  2. 2Drain and rinse the soaked 1 cup dry beans. Peel and cut the 2 medium potatoes into 1-inch cubes. Peel and cut the 1 large carrot into 1-inch pieces. Peel and chop the 1 medium onion. Peel and mince the 2 cloves garlic. Cut the 2 medium tomatoes into 1-inch pieces.
  3. 3In a large heavy-bottomed pot, combine the drained beans, 1 cup corn kernels, the cubed potatoes, the carrot pieces, the chopped onion, the tomato pieces, the minced garlic, and 4 cups vegetable broth. Add 1 tsp salt and 0.5 tsp pepper. Stir everything together.
  4. 4Place the pot over high heat and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 45 to 60 minutes. Stir occasionally. The stew is ready when the beans are tender and the stew has thickened. You can check if the beans are tender by tasting one.
  5. 5While the stew simmers, prepare the flatbread. In a medium bowl, combine 1.5 cups gluten-free flour blend, 0.75 cup water, and 2 tbsp olive oil. Mix with a spoon or your hands until a shaggy dough forms.
  6. 6Turn the dough out onto a clean surface. Knead the dough gently for 1-2 minutes until it comes together smoothly. Divide the dough into 4 equal pieces. Roll each piece into a thin circle, about 6 inches in diameter.
  7. 7Heat a 10-inch skillet over medium heat. Lightly grease the skillet with a tiny bit of the 2 tbsp cooking oil. Cook each flatbread for 2 to 3 minutes per side, until golden brown spots appear and the flatbread is cooked through.
  8. 8Serve the hot Kenyan Bean Stew (Githeri) with the warm gluten-free flatbread on the side.
