Ingredients

  • 1 medium Ripe Mango
  • 1 medium Avocado
  • 1/4 small Red Onion
  • 2 tablespoons Cilantro
  • 2 tablespoons Lime Juice
  • 1/2 small Jalapeno
  • 1/4 teaspoon Salt
  • 2 medium Green Plantains
  • 2 cups Avocado Oil

Instructions

  1. 1In a medium bowl, combine the diced mango, diced avocado, finely chopped red onion, chopped cilantro, lime juice, minced jalapeno (if using), and salt.
  2. 2Gently toss the ingredients together to combine.
  3. 3Peel the green plantains and slice them thinly into chips.
  4. 4Heat avocado oil in a deep skillet or pot over medium heat.
  5. 5Fry the plantain chips in batches until golden brown and crispy, about 2-3 minutes per side.
  6. 6Remove the plantain chips and place them on a paper towel-lined plate to drain excess oil.
  7. 7Serve the avocado and mango salsa with the plantain chips.
