Ingredients

  • 1 can Black beans
  • 2 medium Avocados
  • 0.5 medium Red onion
  • 2 medium Tomato
  • 0.25 cup Cilantro
  • 3 tbsp Lime juice
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 medium Plantains

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel the plantains and slice them thinly. Toss with olive oil and salt. Spread on a baking sheet and bake for 15-20 minutes, flipping halfway through, until crispy.
  3. 3While the plantain chips are baking, prepare the salad. Drain and rinse the black beans.
  4. 4In a large bowl, combine black beans, diced avocados, finely chopped red onion, diced tomatoes, and chopped cilantro.
  5. 5In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  6. 6Pour the dressing over the salad and toss gently to combine.
  7. 7Serve the salad with the baked plantain chips.
