Ingredients

  • 2 cups Gluten-Free All-Purpose Flour
  • 1/2 cup Dairy-Free Butter
  • 1/2 cup Water
  • 1/2 tsp Salt
  • 1/2 cup Arborio Rice
  • 3 cups Dairy-Free Milk
  • 1/4 tsp Salt
  • 2 tbsp Dairy-Free Butter

Instructions

  1. 1Prepare the crust: In a bowl, combine the gluten-free flour, dairy-free butter, water, and salt. Mix until a dough forms. Refrigerate for 30 minutes.
  2. 2Prepare the rice porridge: In a saucepan, combine the rice and dairy-free milk. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until the rice is cooked and the porridge is thick. Season with salt.
  3. 3Preheat oven to 450°F (232°C).
  4. 4Roll out the dough thinly and cut into small circles or ovals.
  5. 5Place a spoonful of rice porridge in the center of each dough piece.
  6. 6Pinch the edges of the dough to create a raised border.
  7. 7Brush the pies with melted dairy-free butter.
  8. 8Bake for 20-25 minutes, or until the crust is golden brown.
  9. 9Serve warm.
