Ingredients

  • 1 lb Kangaroo Loin
  • 1/4 cup Soy Sauce
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Slice kangaroo loin into thin strips, about 1/8 inch thick.
  2. 2In a bowl, combine soy sauce, brown sugar, smoked paprika, garlic powder, and black pepper.
  3. 3Marinate kangaroo strips in the mixture for at least 4 hours, or preferably overnight.
  4. 4Arrange strips on dehydrator trays, ensuring they don't overlap.
  5. 5Dehydrate at 160°F (71°C) for 4-6 hours, or until jerky is dry and leathery.
  6. 6Alternatively, use an oven at lowest setting (around 170F) with the door slightly ajar.
  7. 7Store in an airtight container.
