Kalua Pig Omelette (Gluten-Free)

Ingredients

  • 4 large Eggs
  • 1 cup Kalua Pig
  • 1 cup Spinach
  • 1/4 cup Onion
  • 1 tbsp Coconut Oil
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  1. 1In a medium bowl, whisk together the 4 large eggs, 1/4 tsp salt, and 1/4 tsp black pepper until well combined.
  2. 2Heat 1 tbsp coconut oil in a 10-inch non-stick skillet over medium heat, about 300°F (150°C). Add the 1/4 cup onion and cook for 3-4 minutes, stirring occasionally, until the onion is softened and translucent.
  3. 3Add the 1 cup spinach to the skillet and cook for 1-2 minutes, stirring, until it wilts.
  4. 4Add the 1 cup Kalua Pig to the skillet and stir to combine with the vegetables. Cook for 2-3 minutes, stirring, until the Kalua pig is heated through.
  5. 5Pour half of the egg mixture (about 2 eggs worth) evenly over the Kalua pig and vegetable mixture in the skillet. Cook for 3-5 minutes, without stirring, until the edges of the omelette begin to set and the bottom is lightly golden brown. You can gently lift an edge with a spatula to check the color.
  6. 6Carefully fold the omelette in half using a spatula. Cook for another 1 minute, until the inside of the omelette is cooked through.
  7. 7Slide the finished omelette onto a plate. Repeat steps 5-7 with the remaining egg mixture and Kalua pig filling to make the second omelette.
  8. 8Serve immediately.
