Ingredients

  • 2 medium Tomatoes
  • 1/2 medium Red Onion
  • 1/4 cup Cilantro
  • 1 small Green Chili
  • 2 tablespoons Lime Juice
  • 1/4 teaspoon Salt
  • 2 ripe Plantains
  • 1 tablespoon Olive Oil

Instructions

  1. 1For the Kachumbari: Finely chop the tomatoes, red onion, cilantro, and green chili.
  2. 2In a bowl, combine the chopped vegetables with lime juice and salt. Mix well and set aside to marinate.
  3. 3For the Plantain Chips: Preheat oven to 350°F (175°C).
  4. 4Peel the plantains and slice them thinly.
  5. 5Toss the plantain slices with olive oil and spread them in a single layer on a baking sheet.
  6. 6Bake for 10-15 minutes, or until golden brown and crispy, flipping halfway through.
