Jujeh Kabab (Chicken Kabobs)

Classic Persian grilled chicken kabobs, marinated in saffron and lemon. Shellfish-free and delicious. Served with rice.

Ingredients

  • 1.5 lbs Chicken breast
  • 1 large Onion
  • 0.25 cup Lemon juice
  • 0.25 cup Olive oil
  • 0.5 teaspoon Saffron threads
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cups Cooked rice

Instructions

  1. 1Cut the 1.5 lbs of chicken breast into 1-inch cubes.
  2. 2Grate the 1 large onion, then squeeze out the juice into a small bowl. You should have some onion pulp left; discard this part.
  3. 3In a large bowl, combine the 1-inch chicken cubes, the reserved onion juice, 0.25 cup lemon juice, 0.25 cup olive oil, 0.5 teaspoon saffron threads, 1 teaspoon salt, and 0.5 teaspoon black pepper. Mix everything together thoroughly until the chicken is evenly coated.
  4. 4Cover the bowl and place it in the refrigerator to marinate for at least 2 hours, or preferably overnight. This allows the flavors to soak into the chicken.
  5. 5Thread the marinated chicken pieces onto skewers. You can use metal skewers or wooden skewers that have been soaked in water for at least 30 minutes to prevent burning.
  6. 6Preheat your grill to medium-high heat. This is typically around 400°F (200°C).
  7. 7Place the skewers on the preheated grill. Cook for 8-10 minutes, turning the skewers occasionally, until the chicken is cooked through and has a nice golden-brown color. The internal temperature of the chicken should reach 165°F (74°C).
  8. 8Serve the Jujeh Kabab hot over the 4 cups of cooked rice.
