Ingredients

  • 2 cups Cooked Short-Grain Rice
  • 2 tbsp Potato Starch
  • 2 tbsp Soy Sauce
  • 1 tbsp Mirin (Sweet Rice Wine)
  • 1 tbsp Nori Seaweed Flakes

Instructions

  1. 1Preheat oven to 300°F (150°C).
  2. 2In a food processor, combine cooked rice and potato starch. Pulse until a sticky dough forms.
  3. 3Roll out the dough between two sheets of parchment paper to about 1/8 inch thickness.
  4. 4Cut the dough into desired shapes using cookie cutters or a knife.
  5. 5In a small bowl, mix soy sauce and mirin.
  6. 6Brush the rice crackers with the soy sauce mixture.
  7. 7Sprinkle with nori seaweed flakes.
  8. 8Bake for 25-30 minutes, or until crispy and golden brown. Turn halfway through.
  9. 9Let cool completely before serving.
