Ingredients

  • 2 large Yellow onions
  • 6 cups Dashi broth (kombu based)
  • 1 tbsp Sesame oil
  • 1/2 tsp Salt
  • 1/4 tsp White pepper
  • 2 stalks Green onions, thinly sliced

Instructions

  1. 1Prepare the 2 large yellow onions by thinly slicing them. This means cutting them into very thin, even pieces.
  2. 2Place a large heavy-bottomed pot on the stove over medium heat (350°F / 175°C). Add the 1 tbsp of sesame oil and let it heat up for about 30 seconds until it shimmers slightly.
  3. 3Add the sliced onions to the hot sesame oil in the pot. Cook them, stirring every few minutes, for 20-25 minutes. You are looking for them to become a deep golden brown and smell sweet, which means they are caramelized.
  4. 4Carefully pour the 6 cups of dashi broth into the pot with the caramelized onions. Increase the heat slightly to bring the broth to a gentle simmer, which is when small bubbles rise to the surface continuously.
  5. 5Once the soup is simmering, stir in the 1/2 tsp of salt and the 1/4 tsp of white pepper. Reduce the heat to low to maintain the simmer.
  6. 6Let the soup simmer gently for 15 minutes. This allows the sweet flavor of the onions to fully blend into the broth.
  7. 7Ladle the hot soup into 4 bowls. Garnish each bowl with the thinly sliced 2 stalks of green onions just before serving.
