Janssons Temptation (Gluten-Free)

A creamy potato and anchovy casserole, traditionally a Swedish Christmas dish, made gluten-free with potato starch. Perfect as a hearty lunch.

Ingredients

  • 2 lb Potatoes, peeled and thinly sliced
  • 1 Onion, thinly sliced
  • 3 oz Anchovy fillets, drained and chopped
  • 1 cup Dairy-free heavy cream
  • 1 tbsp Potato starch
  • 2 tbsp Dairy-free butter
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C).
  2. 2Grease a casserole dish with 1 tablespoon of dairy-free butter.
  3. 3Arrange half of the 2 lb potatoes, thinly sliced, in an even layer in the prepared casserole dish. Scatter half of the 1 onion, thinly sliced, and half of the 3 oz anchovy fillets, chopped, over the potatoes. Repeat these layers with the remaining potatoes, onion, and anchovies.
  4. 4In a saucepan, combine the 1 cup of dairy-free heavy cream and 1 tablespoon of potato starch. Heat over medium heat, whisking constantly, until the mixture is smooth and just begins to thicken, about 2-3 minutes. Do not let it boil.
  5. 5Pour the thickened dairy-free cream mixture evenly over the layered potatoes, onion, and anchovies in the casserole dish.
  6. 6Season the top with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  7. 7Bake for 50 minutes, or until the potatoes are tender when pierced with a fork and the top is golden brown and bubbly.
