  • 2 medium Cucumbers
  • 3 medium Tomatoes
  • 1/2 medium Red Onion
  • 1/4 cup Fresh Parsley
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 8 ounces Halloumi Cheese

Instructions

  1. 1Prepare your vegetables by dicing the 2 medium cucumbers, 3 medium tomatoes, and 1/2 medium red onion into small, even pieces, about 1/4-inch in size. Finely chop the 1/4 cup of fresh parsley.
  2. 2In a large bowl, combine the diced 2 medium cucumbers, 3 medium tomatoes, 1/2 medium red onion, and the chopped 1/4 cup of fresh parsley. Add the 2 tablespoons of lemon juice, 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the bowl. Toss everything together gently until the vegetables are evenly coated with the dressing.
  3. 3Slice the 8 ounces of halloumi cheese into 1/4-inch thick pieces.
  4. 4Heat a 10-inch non-stick skillet over medium heat, which is approximately 350°F (175°C).
