Ingredients

  • 1 cup Brown or green lentils
  • 1 large Sweet potato
  • 2 medium Carrot
  • 2 stalks Celery
  • 1 medium Onion
  • 2 cloves Garlic
  • 6 cups Vegetable broth
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 0.5 tsp Turmeric
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Lemon juice

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery and sauté until softened, about 5 minutes.
  2. 2Add minced garlic and cook for another minute until fragrant.
  3. 3Stir in cumin, turmeric, smoked paprika, salt, and pepper.
  4. 4Add lentils, diced sweet potato, and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until lentils and sweet potato are tender.
  5. 5Stir in lemon juice before serving.
