Ingredients

  • 4 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 tbsp Sugar
  • 2 tbsp Dairy-free butter
  • 1 3/4 cups Buttermilk substitute (almond milk with lemon juice)
  • 1/2 cup Raisins or currants

Instructions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2In a large bowl, whisk together flour, baking soda, salt, and sugar (if using).
  3. 3Cut in cold dairy-free butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. 4In a separate bowl, combine unsweetened almond milk and lemon juice. Let it sit for a few minutes to curdle slightly.
  5. 5Add the buttermilk substitute to the dry ingredients. Stir until just combined. Do not overmix.
  6. 6Gently fold in raisins or currants (if using).
  7. 7Turn the dough out onto a lightly floured surface. Shape it into a round loaf, about 1.5-2 inches thick.
  8. 8Place the loaf on the prepared baking sheet. Cut a deep cross into the top of the loaf.
