Irish Rarebit (Cheese on Toast)

Ingredients

  • 8 oz Cheddar cheese, grated
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1/2 cup Milk
  • 1 teaspoon Soy-free Worcestershire sauce
  • 1/4 teaspoon Dry mustard
  • to taste Salt and pepper
  • 4 Bread slices, toasted

Instructions

  1. 1Place a medium saucepan on the stove over medium heat (350°F / 175°C). Add the 2 tablespoons of butter and let it melt completely.
  2. 2Once the butter is melted, add the 2 tablespoons of all-purpose flour. Whisk constantly for 1 minute until it forms a smooth paste. The mixture should smell slightly nutty.
  3. 3Gradually pour in the 1/2 cup of milk while whisking continuously. Continue whisking until the sauce is smooth and there are no lumps.
  4. 4Reduce the heat to low (200°F / 95°C). Add the 8 oz of grated Cheddar cheese, 1 teaspoon of soy-free Worcestershire sauce, and 1/4 teaspoon of dry mustard to the saucepan. Stir gently and constantly until the cheese is fully melted and the sauce is smooth and creamy. This should take about 2-3 minutes.
  5. 5Taste the cheese sauce and add salt and pepper as needed. Stir well to combine.
  6. 6Arrange the 4 toasted bread slices on plates. Pour the warm cheese sauce evenly over each slice of toast. Serve immediately.
