Classic Irish potato cakes, made without dairy or eggs. Crispy on the outside and fluffy on the inside, these are a great side or light lunch.

Ingredients

  • 3 cups Mashed potatoes, cold
  • 0.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 cup Green onions, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Instructions

  1. 1In a large bowl, combine the 3 cups of cold mashed potatoes, the 0.5 cup of all-purpose flour, the 1 teaspoon of baking powder, the 0.25 cup of chopped green onions, the 0.5 teaspoon of salt, and the 0.25 teaspoon of black pepper.
  2. 2Mix all the ingredients together with your hands or a spoon until they are just combined and there are no dry spots of flour.
  3. 3Gently form the mixture into small patties, about 1/2 inch thick. You should aim to make about 8-10 patties.
  4. 4Heat the 2 tablespoons of olive oil in a large skillet over medium heat, which is about 350°F (175°C).
  5. 5Carefully place the potato patties into the hot oil in the skillet. Cook for 4-5 minutes on the first side, until the bottom is golden brown and crispy.
  6. 6Flip the potato cakes over and cook for another 4-5 minutes on the second side, until they are golden brown and crispy on both sides. They should feel firm to the touch.
  7. 7Remove the potato cakes from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
