Ingredients

  • 1 cup Rolled oats (gluten-free)
  • 1/2 cup Gluten-free all-purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Dairy-free milk (oat or rice)
  • 2 tbsp Olive oil
  • 4 oz Dairy-free cheddar cheese, shredded
  • 2 tbsp Fresh chives, chopped

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a bowl, combine rolled oats, gluten-free flour, baking powder, and salt.
  3. 3Add dairy-free milk and olive oil, mixing until a dough forms.
  4. 4Roll out the dough to about 1/4 inch thickness on a lightly floured surface.
  5. 5Cut out circles using a cookie cutter or knife.
  6. 6Place oatcakes on a baking sheet lined with parchment paper.
  7. 7Bake for 20-25 minutes, until golden brown.
  8. 8Top with dairy-free cheddar cheese and bake for another 2-3 minutes until cheese is melted.
  9. 9Garnish with fresh chives and serve warm.
