Icelandic Lamb Soup (Kjötsúpa)

A traditional Icelandic lamb soup with root vegetables. A hearty and warming meal, and completely shellfish-free.

Ingredients

  • 2 lb Lamb shoulder
  • 1 medium Rutabaga
  • 3 medium Carrots
  • 4 medium Potatoes
  • 1 large Leek
  • 2 tsp Dried herbs (thyme, rosemary)
  • 10 cups Water
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Cut the lamb shoulder into 1-inch cubes. Peel and chop the rutabaga, carrots, and potatoes. Slice the leek.
  2. 2In a large pot, combine the lamb, rutabaga, carrots, potatoes, leek, dried herbs, water, salt, and pepper.
  3. 3Bring to a boil, then reduce heat and simmer for 2-2.5 hours, or until the lamb is very tender and the vegetables are soft.
  4. 4Taste and adjust seasoning as needed.
  5. 5Serve hot with gluten-free bread.
