- 4Return the browned beef to the pot. Pour in the 4 cups of beef broth, add the 1 bay leaf and 1 tsp of dried thyme. Bring the liquid to a boil, then reduce the heat to low, cover the pot, and let it simmer for 1 hour. The beef should be starting to become tender.
- 5Add the 2 lbs of peeled and cubed potatoes to the pot. Ensure the potatoes are mostly submerged in the liquid. Continue to simmer, covered, for another 30 minutes, or until the potatoes are easily pierced with a fork.
