Hutspot (Carrot and Onion Mash)

Another Dutch classic, hutspot is a simple yet flavorful dish of mashed potatoes, carrots, and onions. Serve it with a side of meatballs or sausages for a complete meal.

Ingredients

  • 2 lbs Potatoes
  • 1 lb Carrots
  • 2 medium Onions
  • 1/2 cup Beef Broth
  • 2 tablespoons Butter
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Peel the potatoes, carrots, and onions. Cut them into evenly sized pieces.
  2. 2Place the vegetables in a large pot and cover with water. Bring to a boil and cook until tender, about 25-30 minutes.
  3. 3Drain the vegetables, reserving about 1/2 cup of the cooking liquid.
  4. 4Return the vegetables to the pot. Add the beef broth and butter and mash until smooth, adding more cooking liquid if needed to reach the desired consistency.
  5. 5Season with salt and pepper to taste. Serve hot.
