Ingredients

  • 2 lbs Potatoes
  • 1 large Onion
  • 2 tbsp Paprika
  • 2 tbsp Olive oil
  • 1 cup Vegetable broth
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Dairy-free sour cream

Instructions

  1. 1Peel and cube the potatoes. Chop the onion.
  2. 2In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened.
