Ingredients

  • 12 oz Egg noodles
  • 1 lb Ground beef
  • 1 medium Onion
  • 6 oz Tomato paste
  • 2 tbsp Sweet paprika
  • 1 cup Vegetable broth
  • 4 oz Dairy-free cream cheese
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Preheat your oven to 375°F (190°C). In a large pot, bring plenty of water to a rolling boil. Add 1/2 tsp of the 1 tsp salt, then add the 12 oz egg noodles and cook for 7-9 minutes, or until they are tender but still firm to the bite. Drain the noodles well and set them aside.
  2. 2In a large skillet (such as a 12-inch skillet), heat the 2 tbsp olive oil over medium-high heat until it shimmers. Add the 1 lb ground beef and cook for 6-8 minutes, breaking it apart with a spoon, until it is fully browned and no pink remains. Carefully drain any excess fat from the skillet.
  3. 3Dice the 1 medium onion into 1/4-inch pieces. Add the diced onion to the skillet with the browned beef and cook over medium heat for 5-7 minutes, stirring occasionally, until the onion pieces are softened and translucent.
  4. 4Stir in the 6 oz tomato paste, 2 tbsp sweet paprika, and 1 cup vegetable broth into the beef and onion mixture. Add the remaining 1/2 tsp salt and the 1/2 tsp black pepper. Bring the mixture to a gentle simmer over medium heat and cook for 10 minutes, stirring occasionally, until the sauce has thickened slightly. Remove the skillet from the heat.
  5. 5In a large mixing bowl, combine the cooked and drained 12 oz egg noodles, the ground beef and sauce mixture, and the 4 oz dairy-free cream cheese. Stir gently with a spoon until all ingredients are evenly distributed and the cream cheese is melted and fully incorporated into the mixture.
  6. 6Transfer the noodle mixture into a 9x13-inch baking dish. Bake for 30-35 minutes in the preheated oven, until the casserole is heated through, bubbly around the edges, and the top is lightly golden. Carefully remove the baking dish from the oven and let the casserole rest for 5 minutes before serving, allowing the flavors to meld and the casserole to set slightly.
