Hungarian Lecsó with Sausage (Gluten-Free)

Ingredients

  • 1 lb Hungarian sausage (csabai kolbász or similar)
  • 3 medium Bell peppers (mix of colors)
  • 4 medium Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Sweet paprika
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Slice the sausage into rounds. Chop the bell peppers, tomatoes, and onion. Mince the garlic.
  2. 2Heat olive oil in a large skillet or pot over medium heat. Add the sausage and cook until browned.
  3. 3Add the onion and cook until softened, about 5 minutes.
  4. 4Add the bell peppers and cook until slightly softened, about 5 minutes.
  5. 5Add the tomatoes, garlic, sweet paprika, salt, and pepper. Bring to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
  6. 6Serve hot, optionally with gluten-free bread.
