  • 4 medium Bell peppers (mix of colors)
  • 1 lb Tomatoes
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tsp Smoked paprika
  • 2 tbsp Vegetable oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Heat vegetable oil in a large skillet over medium heat.
  2. 2Add chopped onion and sauté until softened.
  3. 3Add sliced bell peppers and cook for 5-7 minutes, until slightly softened.
  4. 4Add diced tomatoes, minced garlic, and smoked paprika. Stir well.
