Hungarian Green Bean Stew (Főzelék)

Ingredients

  • 1.5 lbs Green beans
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Sweet paprika
  • 4 cups Vegetable broth
  • 1 tbsp Tapioca starch
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Dairy-free sour cream (coconut-based)

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped onion and sauté until softened, about 5 minutes.
  3. 3Add minced garlic and cook for 1 minute more.
  4. 4Stir in sweet paprika and cook for 1 minute.
  5. 5Add green beans and vegetable broth. Season with salt and pepper.
  6. 6Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until green beans are tender.
  7. 7In a small bowl, whisk tapioca starch with 2 tablespoons of cold water. Pour into the stew and cook for 2-3 minutes, or until the stew is thickened.
  8. 8Serve hot with a dollop of dairy-free sour cream (optional).
