Ingredients

  • 2 lbs Beef chuck
  • 2 medium Onion
  • 2 medium Carrots
  • 3 medium Potatoes
  • 3 tbsp Sweet paprika
  • 1 tsp Smoked paprika
  • 1 tsp Caraway seeds
  • 8 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 cup Dairy-Free Yogurt (for serving)

Instructions

  1. 1Cut beef chuck into 1-inch cubes. Chop onions, carrots, and potatoes.
  2. 2Heat olive oil in a large pot over medium heat. Brown beef cubes in batches and set aside.
  3. 3Add chopped onions and carrots to the pot and sauté until softened, about 5 minutes.
  4. 4Stir in sweet paprika, smoked paprika, caraway seeds, and tomato paste. Cook for 1 minute.
  5. 5Return beef to the pot. Pour in beef broth and bring to a boil.
  6. 6Reduce heat, cover, and simmer for 1.5 hours, or until beef is tender.
  7. 7Add chopped potatoes and cook for 30 more minutes, or until potatoes are tender.
  8. 8Season with salt and pepper to taste. Serve with dairy-free yogurt.
