Hungarian Fisherman's Soup (Dairy-Free)

Ingredients

  • 1.5 lb Firm-fleshed fish (cod, halibut, or bass)
  • 2 medium Onion
  • 1 medium Green bell pepper
  • 2 medium Tomato
  • 2 tbsp Sweet paprika
  • 1 tsp Hot paprika
  • 6 cups Fish broth
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  1. 1Cut fish into 1-inch cubes. Set aside.
  2. 2In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. 3Add chopped green bell pepper and cook for 3 minutes.
  4. 4Stir in sweet paprika and hot paprika. Cook for 1 minute.
  5. 5Add diced tomatoes and fish broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. 6Add fish and cook until it is cooked through, about 5-7 minutes.
  7. 7Season with salt and pepper to taste.
