Ingredients

  • 4 cups All-Purpose Flour
  • 1 tbsp Instant Yeast
  • 1/4 cup Sugar
  • 1/2 tsp Salt
  • 1 cup Plant-Based Milk (warmed)
  • 1 cup Vegan Butter (cold, cubed)
  • 2 cups Ground Poppy Seeds
  • 3/4 cup Sugar
  • 1/2 cup Plant-Based Milk
  • 1 tbsp Lemon Zest
  • 1 tsp Vanilla Extract

Instructions

  1. 1In a large bowl, combine flour, yeast, sugar, and salt.
  2. 2Add warm plant-based milk and cold vegan butter. Mix until the mixture resembles coarse crumbs.
  3. 3Knead the dough lightly, then divide into two equal portions. Wrap each portion and refrigerate for at least 2 hours.
  4. 4For the filling, combine ground poppy seeds, sugar, plant-based milk, lemon zest, and vanilla extract in a saucepan. Cook over medium heat, stirring constantly, until thickened.
  5. 5Preheat oven to 350°F (175°C).
  6. 6Roll out one portion of dough into a rectangle. Spread half of the poppy seed filling evenly over the dough.
  7. 7Roll the dough up tightly and place on a baking sheet.
  8. 8Repeat with the remaining dough and filling.
  9. 9Bake for 30-35 minutes, or until golden brown. Let cool completely before slicing and serving.
