Ingredients

  • about 450 g Gluten-free pasta
  • 1.5 cups Cottage cheese
  • 1/2 cup Sour cream (dairy-free option available)
  • 2 tbsp Butter (dairy-free option available)
  • 2 tbsp Sugar (optional)
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1Bring a large pot (e.g., 6-quart or larger) of water to a rolling boil over high heat (approximately 100°C / 100°C). Add the about 450 g of gluten-free pasta to the boiling water, stirring occasionally to prevent sticking.
  2. 2Cook the gluten-free pasta for 8-12 minutes, or until it is tender but still firm to the bite (al dente).
  3. 3While the gluten-free pasta cooks, melt the 2 tablespoons of butter (or dairy-free option) in a small saucepan over low heat, or in a microwave-safe bowl. In a large mixing bowl, combine the 1.5 cups of cottage cheese, the 1/2 cup of sour cream (or dairy-free option), and the melted 2 tablespoons of butter.
  4. 4If you prefer a sweet dish, stir in the 2 tablespoons of sugar with the cottage cheese mixture. If you prefer a savory dish, stir in the 1/4 teaspoon of salt and the 1/4 teaspoon of pepper with the cottage cheese mixture.
  5. 5Carefully pour the cooked gluten-free pasta into a colander to drain all the water thoroughly. Add the drained about 450 g of gluten-free pasta directly into the large mixing bowl with the cottage cheese mixture and gently toss until the pasta is evenly coated. Serve warm.
