Ingredients

  • 1 cup Dried white beans
  • 1 small Smoked ham hock
  • 2 medium Carrots
  • 1 medium Parsnip
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tbsp Sweet paprika
  • 1 tsp Smoked paprika
  • 1 Bay leaf
  • 6 cups Vegetable broth
  • 0.5 cup Coconut cream
  • 1 tbsp Apple cider vinegar
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1Soak dried white beans overnight.
  2. 2In a large pot, combine soaked beans, smoked ham hock, chopped carrots, chopped parsnip, chopped onion, and minced garlic.
  3. 3Add sweet paprika, smoked paprika, bay leaf, and vegetable broth.
  4. 4Bring to a boil, then reduce heat and simmer for 1 hour, or until beans are tender.
  5. 5Remove ham hock from the pot, shred the meat, and return it to the soup.
  6. 6Stir in coconut cream and apple cider vinegar. Season with salt and pepper to taste. Simmer for 5 more minutes.
