Ingredients

  • 6 cups Fresh corn kernels
  • 1 medium Onion
  • 1/2 cup Fresh basil leaves
  • 1/4 cup Butter
  • 1 tsp Salt
  • 1 tsp Sugar
  • 12 large Corn husks

Instructions

  1. 1Soak the corn husks in warm water for at least 30 minutes to soften.
  2. 2In a food processor, combine the corn kernels, diced onion, basil leaves, melted butter, salt, and sugar.
  3. 3Process until a smooth paste forms.
  4. 4Open a corn husk and spread a generous amount of the corn mixture in the center.
  5. 5Fold the sides of the husk over the filling, then fold up the bottom.
  6. 6Tie with a strip of corn husk to secure.
  7. 7Steam the humitas in a steamer basket for 45 minutes, or until cooked through.
  8. 8Alternatively, bake the humitas in a preheated oven at 350°F (175°C) for 45 minutes.
  9. 9Let cool slightly before serving.
