Humitas en Olla (Dairy-Free)

A creamy Chilean corn dish, similar to tamales but cooked in a pot without the husks. This version is dairy-free and seasoned with basil.

Ingredients

  • 6 cups Fresh corn kernels
  • 1/2 medium Onion
  • 1/2 cup Fresh basil leaves
  • 2 tablespoons Vegetable oil
  • 1/2 cup Vegetable broth
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Instructions

  1. 1In a food processor or blender, combine the 6 cups of fresh corn kernels, the 1/2 medium onion, and the 1/2 cup of fresh basil leaves. Process until the mixture is smooth.
  2. 2Place a large, heavy-bottomed pot on the stove and heat the 2 tablespoons of vegetable oil over medium heat, which is 350°F (175°C).
  3. 3Add the smooth corn mixture to the hot pot. Cook, stirring frequently, for 10 minutes until the mixture is slightly thickened and has a cooked aroma.
  4. 4Pour in the 1/2 cup of vegetable broth, 1 teaspoon of sugar, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Stir everything together and bring the mixture to a gentle simmer.
  5. 5Reduce the heat to low, which is around 200°F (95°C). Cover the pot loosely and cook for 30 to 45 minutes, stirring occasionally. The humitas are ready when the mixture has thickened to a creamy, porridge-like consistency.
  6. 6Serve the humitas en olla warm.
