Humitas en Olla (Corn Stew)

Ingredients

  • 6 cups Fresh corn kernels
  • 1 medium Onion
  • 1/4 cup Fresh basil leaves
  • 1 cup Vegetable broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Sugar

Instructions

  1. 1Heat the 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat, which is about 350°F (175°C).
  2. 2Add the 1 medium onion, cut into 1/4-inch dice, and cook, stirring occasionally, until the onion is softened and translucent, about 5 to 7 minutes. Do not let it brown.
  3. 3Add the 6 cups of fresh corn kernels, 1 cup of vegetable broth, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot. Stir everything together.
  4. 4Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 minutes, or until the corn kernels are tender and the stew has thickened to your desired consistency. Stir occasionally to prevent sticking.
  5. 5Remove the pot from the heat. Stir in the 1/4 cup of fresh basil leaves until they are evenly distributed throughout the stew. The residual heat will wilt the basil slightly.
  6. 6Serve the humitas en olla hot. If you prefer a touch of sweetness, you can stir in the 1 teaspoon of sugar before serving.
