Ingredients

  • 1 Whole Chicken (3-4 lb)
  • 1 cup Pineapple Juice
  • 1/2 cup Coconut Aminos
  • 1/4 cup Brown Sugar
  • 2 tbsp Ginger, grated
  • 4 cloves Garlic, minced
  • 2 tbsp Ketchup (Soy-Free)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1/2 tsp Red Pepper Flakes

Instructions

  1. 1Prepare marinade: In a large bowl, whisk together pineapple juice, Coconut Aminos, brown sugar, ginger, garlic, ketchup (soy-free), rice vinegar, sesame oil, and red pepper flakes (if using).
  2. 2Marinate chicken: Place the whole chicken in a large resealable bag or container. Pour the marinade over the chicken, ensuring it's fully coated. Marinate in the refrigerator for at least 4 hours, or preferably overnight.
  3. 3Grill chicken: Preheat grill to medium heat. Place the marinated chicken on the grill and cook for about 45 minutes to 1 hour, turning occasionally, until the internal temperature reaches 165°F (74°C). Baste with the marinade during the last 15 minutes of cooking.
  4. 4Serve: Let the chicken rest for 10 minutes before carving and serving.
