Huli Huli Chicken (Gluten-Free)

Classic Hawaiian Huli Huli chicken made gluten-free by using gluten-free soy sauce and other safe ingredients. Requires constant turning on the grill.

Ingredients

  • 1 each Whole Chicken (about 3-4 lbs)
  • 1/2 cup Gluten-Free Soy Sauce
  • 1/4 cup Brown Sugar
  • 1/4 cup Pineapple Juice
  • 2 tbsp Ginger, grated
  • 4 cloves Garlic, minced
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1/4 cup Green Onions, chopped

Instructions

  1. 1In a bowl, combine gluten-free soy sauce, brown sugar, pineapple juice, grated ginger, minced garlic, rice vinegar, and sesame oil.
  2. 2Reserve 1/4 cup of the marinade for basting.
  3. 3Place the chicken in a large resealable bag or container and pour the remaining marinade over it. Marinate in the refrigerator for at least 2 hours, or preferably overnight.
  4. 4Preheat your grill to medium heat.
  5. 5Place the chicken on the grill, breast side up.
  6. 6Grill the chicken for about 45 minutes to 1 hour, turning every 10-15 minutes and basting with the reserved marinade, until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  7. 7Let the chicken rest for 10 minutes before carving and serving.
  8. 8Garnish with chopped green onions.
