Huli Huli Chicken

Ingredients

  • 8 pieces Chicken Thighs
  • 1/2 cup Soy Sauce
  • 1/4 cup Brown Sugar
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 2 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1/4 cup Pineapple Juice

Instructions

  1. 1In a medium bowl, combine the 1/2 cup soy sauce, 1/4 cup brown sugar, 1 tablespoon ginger, 2 cloves garlic, 2 tablespoons rice vinegar, 1 teaspoon sesame oil, and 1/4 cup pineapple juice. Whisk everything together until the brown sugar is dissolved.
  2. 2Add the 8 pieces chicken thighs to the bowl with the marinade. Turn the chicken pieces to coat them evenly. Cover the bowl and refrigerate for at least 30 minutes, or for up to overnight.
  3. 3Preheat your grill to medium-high heat. This is about 400-450°F (200-230°C).
  4. 4Remove the chicken thighs from the marinade, letting any excess drip off. Place the chicken on the preheated grill.
  5. 5Grill the chicken for 6 to 8 minutes on the first side. Flip the chicken and grill for another 6 to 8 minutes on the second side. The chicken is done when it is cooked through and has a slightly charred appearance. The internal temperature should reach 165°F (74°C).
