Ingredients

  • 8 Corn tortillas
  • 4 Large eggs
  • 1 28-oz can Canned diced tomatoes
  • 1/2 Onion
  • 1 Jalapeno
  • 2 cloves Garlic
  • 1/2 cup Sunflower seeds
  • 1 tablespoon Lime juice
  • 1/4 cup Vegetable broth
  • 1/4 cup Cilantro
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions

  1. 1Preheat your oven to 350°F (175°C). Place the 8 corn tortillas on a baking sheet and warm them in the preheated oven for 5-10 minutes, or until they are pliable.
  2. 2While the tortillas warm, prepare the salsa. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the 1/2 onion, chopped into small pieces, and the 1 jalapeno, with the seeds removed and minced, and cook for 5-7 minutes, stirring occasionally, until the onion is softened and translucent.
  3. 3Add the 2 cloves of garlic, minced, to the skillet and cook for 1 minute more, until fragrant. Be careful not to burn the garlic.
  4. 4Pour in the 1 28-oz can of diced tomatoes, including their juice. Season with salt and black pepper to your taste. Bring the mixture to a simmer, then reduce the heat to low and cook for 15 minutes, stirring occasionally, allowing the flavors to meld.
  5. 5While the salsa simmers, prepare the sunflower seed crema. Place the 1/2 cup of sunflower seeds in a heatproof bowl and cover them with hot water. Let them soak for 15 minutes. Drain the sunflower seeds thoroughly.
  6. 6Transfer the drained sunflower seeds to a blender. Add the 1 tablespoon of lime juice, 1/4 cup of vegetable broth, 1/4 cup of cilantro, and a pinch of salt. Blend until the mixture is completely smooth and creamy.
  7. 7In a separate non-stick skillet, heat a little more olive oil over medium heat. Crack the 4 large eggs into the skillet and cook them to your desired doneness, such as sunny-side up or over easy.
  8. 8To assemble, place 2 warm tortillas on each of the 4 plates. Spoon a generous amount of the tomato salsa over each tortilla. Carefully place one fried egg on top of the salsa. Finish by adding a dollop of the sunflower seed crema and a sprinkle of extra cilantro, if desired.
