Hokey Pokey Ice Cream Sandwiches (Vegan)

A vegan twist on a New Zealand favorite! These ice cream sandwiches feature creamy dairy-free vanilla ice cream and crunchy homemade vegan hokey pokey, sandwiched between soft cookies.

Ingredients

  • 1 pint Vegan vanilla ice cream
  • 0.5 cup Vegan butter
  • 0.5 cup Sugar
  • 2 tablespoons Golden syrup
  • 1.5 teaspoons Baking soda
  • 1.5 cups All-purpose flour
  • 0.5 cups Vegan Chocolate Chips

Instructions

  1. 1Line a baking sheet with parchment paper. This will prevent the hokey pokey from sticking and make it easy to remove once cooled.
  2. 2In a medium saucepan, combine the 0.5 cup of vegan butter, the 0.5 cup of sugar, and the 2 tablespoons of golden syrup. Heat the mixture over medium heat, stirring continuously with a whisk or spoon, until the sugar is completely dissolved and the mixture is smooth.
  3. 3Increase the heat to medium-high and bring the mixture to a rolling boil. Continue to boil for 3 to 4 minutes without stirring, until the mixture turns a light golden color, resembling honey. If you have a candy thermometer, it should reach 300°F (149°C) for a hard crack stage.
  4. 4Immediately remove the saucepan from the heat and quickly stir in the 1.5 teaspoons of baking soda using a whisk or spoon. The mixture will rapidly foam up and expand. Immediately pour the entire foamy mixture onto the prepared baking sheet; do not spread it.
  5. 5Allow the hokey pokey to cool completely at room temperature for at least 30 minutes, or until it is hard and brittle to the touch. Once hardened, break the hokey pokey into small, irregular pieces using your hands or the back of a spoon.
  6. 6Take two soft vegan cookies (not provided in ingredients, but needed for the dish). Place a generous scoop of the 1 pint of vegan vanilla ice cream onto the flat side of one cookie. Sprinkle a good amount of the broken hokey pokey pieces over the ice cream, then gently press the second cookie on top to form a sandwich. Repeat this process to assemble the remaining sandwiches.
  7. 7Serve the ice cream sandwiches immediately, or wrap each sandwich tightly in plastic wrap and freeze for at least 1 hour to firm up before serving later. The prepared sandwiches can be stored in the freezer for up to 1 week.
