Ingredients

  • 4 medium Ripe Tomatoes, chopped
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 tbsp Scallions, chopped
  • 2 tbsp Cilantro, chopped
  • 2 tbsp Vegetable Oil
  • 2 large Green Plantains
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. 1Heat vegetable oil in a large skillet over medium heat.
  2. 2Add chopped onion and garlic and cook until softened, about 5 minutes.
  3. 3Add chopped tomatoes and cook until they break down and form a sauce, about 20 minutes.
  4. 4Stir in scallions and cilantro. Season with salt and pepper.
  5. 5Preheat oven to 375°F (190°C).
  6. 6Peel and thinly slice the green plantains.
  7. 7Arrange the plantain slices on a baking sheet and bake for 15-20 minutes, or until crispy.
  8. 8Serve the hogao sauce with the baked plantain chips for dipping.
