Ingredients

  • 2 tbsp Olive oil
  • 1 medium Yellow onion, chopped
  • 2 medium Carrots, diced
  • 2 stalks Celery stalks, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Tomato paste
  • 1 tsp Dried rosemary
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 lbs Sweet potatoes, peeled and cubed
  • 0.25 cup Unsweetened plant-based milk (e.g., oat or soy)
  • 2 tbsp Nutritional yeast (optional, for cheesy flavor)

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Cook lentils: Combine rinsed lentils and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until tender. Drain any excess liquid.
  3. 3Prepare the filling: While lentils cook, heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Sauté until softened, about 8-10 minutes.
  4. 4Add minced garlic and tomato paste. Cook for 1 minute more until fragrant.
  5. 5Stir in the cooked lentils, rosemary, thyme, salt, and pepper. Cook for 2-3 minutes, stirring to combine.
