Ingredients

Instructions

  1. 1For the filling: Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 8-10 minutes.
  2. 2Add minced garlic and cook for 1 minute more until fragrant.
  3. 3Stir in tomato paste, rosemary, thyme, salt, and pepper. Cook for 1 minute.
  4. 4Add the rinsed lentils and allergen-free vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until lentils are tender and most of the liquid is absorbed. Stir occasionally.
  5. 5While the lentils cook, prepare the topping: Place the cubed sweet potatoes in a pot and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  6. 6Drain the sweet potatoes well. Return them to the pot and mash them with the plant-based milk until smooth and creamy. Stir in nutritional yeast if using. Season with salt and pepper to taste.
