Hawaiian Style Fried Noodles (Saimin)

Ingredients

  • 1 lb Saimin noodles or egg-free yakisoba
  • 8 oz Char siu pork, sliced
  • 2 cups Cabbage, shredded
  • 1 cup Carrots, julienned
  • 0.5 cup Green onions, chopped
  • 0.25 cup Soy sauce
  • 2 tbsp Oyster sauce (check for egg derivatives, use soy sauce as sub)
  • 1 tbsp Sesame oil
  • 2 cloves Garlic, minced
  • 2 tbsp Vegetable oil

Instructions

  1. 1Bring a large pot (approximately 4 quarts or 4 liters) of water to a rolling boil over high heat. Carefully add the 1 lb Saimin noodles or egg-free yakisoba to the boiling water and cook for 3 to 5 minutes, stirring occasionally, until the noodles are tender but still firm to the bite. Drain the noodles thoroughly in a colander and set them aside.
  2. 2Place a large wok or 12-inch skillet over medium-high heat (approximately 375°F / 190°C). Add the 2 tablespoons of vegetable oil to the pan and heat for about 1 minute, until the oil begins to shimmer.
  3. 3Add the 2 cloves of minced garlic to the hot oil. Stir constantly for 30 seconds, until the garlic becomes fragrant and lightly golden, being careful not to let it burn.
  4. 4Add the 8 oz of sliced Char siu pork, 2 cups of shredded cabbage, and 1 cup of julienned carrots to the wok. Stir-fry for 3 to 4 minutes, tossing frequently, until the cabbage and carrots are bright in color, slightly softened, but still retain a crisp texture.
  5. 5Add the cooked 1 lb Saimin noodles or egg-free yakisoba to the wok. Pour in the 0.25 cup of soy sauce, 2 tablespoons of oyster sauce, and 1 tablespoon of sesame oil. Stir and toss continuously for 2 to 3 minutes, ensuring all ingredients are evenly coated with the sauce and thoroughly heated through.
  6. 6Remove the wok from the heat. Sprinkle the 0.5 cup of chopped green onions evenly over the noodles. Serve the Hawaiian Style Fried Noodles immediately.
