Ingredients

  • 4 cups Cooked Rice (day-old)
  • 1 cup Ham, diced
  • 1 cup Pineapple, diced
  • 1/2 cup Carrot, diced
  • 1/2 cup Green Peas
  • 1/2 cup Onion, diced
  • 3 tbsp Coconut Aminos
  • 1 tbsp Sesame Oil
  • 1 tbsp Olive Oil
  • 2 Eggs, beaten
  • 1/4 cup Cashews, chopped

Instructions

  1. 1Heat oil: Heat sesame oil and olive oil in a large skillet or wok over medium-high heat.
  2. 2Cook vegetables: Add onion and carrot and cook until softened, about 3-4 minutes. Add green peas and cook for another minute.
  3. 3Add ham and pineapple: Add diced ham and pineapple and cook for 2-3 minutes.
  4. 4Cook eggs: Push the ingredients to one side of the skillet. Pour the beaten eggs onto the other side and scramble until cooked.
  5. 5Add rice: Add the cooked rice to the skillet and break it up with a spatula. Stir in Coconut Aminos.
  6. 6Combine: Stir all ingredients together until well combined and heated through.
  7. 7Serve: Serve hot, garnished with chopped cashews (optional).
