  • 1 box Sweet Rice Flour (Mochiko)
  • 2 cups Sugar
  • 1 can Coconut Milk
  • 1 can Evaporated Milk
  • 1 cup Melted Butter
  • 4 Eggs
  • 1 teaspoon Vanilla Extract

Instructions

  1. 1Preheat your oven to 350°F (175°C). Have a 9x13 inch baking pan ready.
  2. 2In a large mixing bowl, combine the 1 box of Sweet Rice Flour and the 2 cups of Sugar.
  3. 3Add the 1 can of Coconut Milk, the 1 can of Evaporated Milk, the 1 cup of Melted Butter, the 4 Eggs, and the 1 teaspoon of Vanilla Extract to the bowl with the dry ingredients.
  4. 4Mix all the ingredients thoroughly until the batter is smooth and no lumps remain.
  5. 5Pour the smooth batter into the 9x13 inch baking pan. Bake for 45-55 minutes at 350°F (175°C), until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. 6Allow the mochi to cool completely in the pan. This cooling step is important for the mochi to set properly before you cut it into bite-sized pieces.
