A hearty and comforting Emirati porridge made from wheat and chicken. This version uses shredded jackfruit as a meat substitute and is topped with spiced vegan butter.

Ingredients

  • 1 cup Whole Wheat Berries
  • 1 can Shredded Young Jackfruit (canned)
  • 6 cups Vegetable Broth
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 inch Ginger
  • 4 tablespoons Vegan Butter
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 0.5 teaspoon Turmeric Powder
  • to taste Salt
  • to taste Black Pepper

Instructions

  1. 1Rinse wheat berries and soak in water for at least 4 hours, or preferably overnight.
  2. 2Drain the wheat berries and add them to a large pot with vegetable broth.
  3. 3Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the wheat berries are very soft and have broken down.
  4. 4Sauté chopped onion, garlic, and ginger until softened. Add jackfruit and spices, sauté for another 5-7 minutes.
  5. 5Add jackfruit mixture to the pot with the wheat berries. Continue to simmer, stirring occasionally, until the mixture is thick and creamy (about 30 minutes).
  6. 6In a separate pan, melt vegan butter over medium heat. Add cumin, coriander, and turmeric powder, sauté for 1 minute.
  7. 7Season with salt and pepper to taste.
  8. 8Serve harees topped with spiced vegan butter.
