Ingredients

  • 600 g Chicken Thighs
  • 2 medium Kumara (Sweet Potato)
  • 3 medium Carrots
  • 1 medium Onion
  • 300 g Pumpkin
  • 2 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1 tsp Liquid Smoke

Instructions

  1. 1Preheat oven to 180°C (350°F).
  2. 2Cut kumara, carrots, onion, and pumpkin into 1-inch pieces.
  3. 3In a large bowl, toss vegetables with olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. 4Cut four large pieces of aluminum foil. Place a portion of the vegetable mixture in the center of each foil.
  5. 5Top with chicken thighs and drizzle with liquid smoke.
  6. 6Seal the foil packets tightly, ensuring there are no openings.
  7. 7Bake for 45 minutes, or until chicken is cooked through and vegetables are tender.
  8. 8Carefully open the foil packets (steam will escape) and serve.
