Hangi-Inspired Chicken Bites with Kawakawa Marinade

Ingredients

  • 1 lb Chicken Thighs, boneless, skinless, cubed
  • 1/4 cup Kawakawa Leaves, finely chopped
  • 2 tbsp Manuka Honey
  • 2 tbsp Coconut Aminos
  • 1 tsp Ginger, grated
  • 2 cloves Garlic, minced
  • 1/2 tsp Smoked Paprika
  • 1 tbsp Olive Oil

Instructions

  1. 1In a bowl, combine chopped Kawakawa leaves, Manuka honey, coconut aminos, grated ginger, minced garlic, and smoked paprika.
  2. 2Add the cubed chicken thighs to the marinade and mix well to coat. Let it marinate for at least 20 minutes.
  3. 3Heat olive oil in a large skillet over medium-high heat.
  4. 4Add the marinated chicken to the skillet and cook for 5-7 minutes per side, until cooked through and slightly caramelized.
  5. 5Serve hot as a flavorful snack or appetizer.
